Lamb & Pasta Puttanesca – The UnF🍷cable Way
Ingredients:
- 1 lb lamb shoulder, cut into bite-sized pieces
- 1 lb penne or rigatoni pasta
- 1 can (28 oz) San Marzano tomatoes, crushed
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup capers, drained
- 6 anchovy fillets, chopped (trust me on this)
- 4 cloves garlic, minced
- 1 medium onion, diced
- 1/4 cup good olive oil
- 1/2 cup dry red wine (save the rest for sipping)
- Fresh basil and parsley
- Red pepper flakes to taste
- Salt and freshly cracked black pepper
Instructions:
- Season lamb pieces with salt and pepper. Heat olive oil in a large pan and brown the lamb on all sides.
- Add onions and garlic, cook until fragrant and softened.
- Deglaze with red wine (hello, flavor!), then add tomatoes, olives, capers, and anchovies.
- Let it simmer low and slow for 45 minutes while you sip your wine and plan your empire.
